A tasty gluten, dairy and soy free dinner
I wasn't aiming for gluten free, but that's what I got EDIT: Kind of :) (apart from the pudding, which I bought. Insert your own pudding)
I made these recipes up off the top of my head based on other recipes I have seen/done, there's almost certainly better versions of both but I wanted to record this. Nb not vegan.
Potato salad
I can't have anything sour, spicy, or fatty, which cuts out almost every salad dressing ever.
As you finish each step, put the ingredients in a big bowl:
-Chop and cook 3 large potatoes. I microwaved them with a little salt, water and fresh rosemary which worked ok.
-Boil 2 eggs.
-Season 3 chicken tenderloins, then fry in a nonstick pan. When browned, put to the side then add some minced garlic and onion and a dab of margarine to the pan. Add a little water to deglaze, then cook until translucentish.
Add handfuls of parsley and basil and any other soft herbs you fancy. saute briefly, then add some chicken stock and frozen peas. Put the chicken tenderloins on top and cover. Leave to simmer on low until the chicken is cooked, then chop the chicken.
Mix. Cool (if you like) Makes 1.5 serves.
I think this would be nice with bacon and apple instead of chicken and eggs.
Custard
Splash some rum (or if you have it, which I don't, brandy) and vanilla extract into a saucepan and if you need to boil out the alcohol.
Add half a cup of oat milk, a pinch of cinnamon, a dash of cloves, and a pinch of nutmeg and bring to the boil.
Meanwhile combine 1 tablespoon corn flour, 1 tablespoon sugar, and a little more oat milk in a bowl. Whisk in an egg.
Slowly pour the milk into the bowl, mixing as you go. Pour back into the saucepan and stir over a low heat until thickened.
I'm assuming it would be ok with rice/almond etc milk.
Makes about 1/2 cup. VERY tasty with xmas pudding :)
I haven't made milk-free custard before, I was worried it wouldn't work so am very happy it did. I was looking up soy-and-dairy free icecream today, part of me is seriously considering an icecream maker.
