Very approximately:
2 tablespoons white wine (I usually use red, but this worked really well)
2 large dashes soy sauce
several (much smaller) dashes of fish sauce
lots of salt & pepper
half a handful diced red onion
1 clove garlic, chopped
pinch of fresh parsley
2 sprigs fresh thyme
2 sprigs fresh rosemary

Marinate for a day. Yum :)

The fish sauce+pepper is a gluten free substitute for Worcestershire sauce. Normally I'd also add some brown sugar (these ingredients being based off the ingredients on the back of the Worcestershire sauce bottle), I don't think I did this time but maybe I did.

I made two, and I'm a curious to know how the second will go sautéed with potato, spinach, and pasta sauce. My brain tells me it will be tasty, but we shall see once it's done cooking :)

This reminded me of what I was going to tell you earlier. Most soy sauce has wheat in it.

Did you use Tamari?

And see, I knew this, and I "checked", but further analysis reveals...my soy sauce DOES have wheat in it. Dammit. Luckily I've decided not to be SUPER neurotic about this sort of thing for a few months while I figure all this stuff out, but still. I will buy some marked-as-gluten-free stuff today, I remember seeing some.

Thanks!
