I kind of already mentioned these but wanted a neat link. Based on these hotcakes, they're filling and tasty and relatively healthy, and can be either savoury or sweet, or eaten plain.

Dry Ingredients:
1 cup flour
1 cup rolled oats
1 tablespoon baking powder

Wet:
2 eggs (beaten)
1 1/2 cups milk (rice milk works fine)
2 teaspoons oil

Mix/sift dry ingredients. Mix in the wet ingredients. Fry. Serves 2 for lunch.

Keep in kind it's all a bit made up, you may need to mess around with quantities to get the consistency you like.

Made with much success yesterday. Multiplied by 1.5, intended for 3 people - in hindsight 1.0 would have been pretty much exactly the right amount (oh darn, left over pancakes for breakfast today, woe is me).
It wasn't until the 3rd pancake that I got used to the consistency (it's significantly thicker than the mix I usually make), but after that I thought they came out very well. It's definitely a much healthier mix than my other recipe (modulo the health of the toppings).

I've tried them thinner, and you end up with a gluggy oaty centre and thin bland edges. Glad you got them to work for you!
And yes, the advantage of healthy pancakes is it gives you license to use very unhealthy toppings :D
