I kind of already mentioned these but wanted a neat link. Based on these hotcakes, they're filling and tasty and relatively healthy, and can be either savoury or sweet, or eaten plain.
Dry Ingredients:
1 cup flour
1 cup rolled oats
1 tablespoon baking powder
Wet:
2 eggs (beaten)
1 1/2 cups milk (rice milk works fine)
2 teaspoons oil
Mix/sift dry ingredients. Mix in the wet ingredients. Fry. Serves 2 for lunch.

It wasn't until the 3rd pancake that I got used to the consistency (it's significantly thicker than the mix I usually make), but after that I thought they came out very well. It's definitely a much healthier mix than my other recipe (modulo the health of the toppings).

And yes, the advantage of healthy pancakes is it gives you license to use very unhealthy toppings :D
